{In the Oprah voice} Attention Lemonnnn Loverssssssss! Do I have your attention now? Good, because this Lemon Delight is one of my family’s favorite desserts! I had my first taste of this lemony piece of heaven over 20 years ago, when my Aunt Anita made it for one of our family gatherings. I come from a long line of fabulous cooks and bakers, so our “get togethers” are more along the lines of a massive buffets of everything you could possibly dream of. This Lemon Delight is also my Mom’s favorite dessert, so I’ve made it a tradition to make it for her every Mother’s Day. This year it was made a little later than Mother’s Day, but it was eventually made with love and enjoyed by all. By that, I mean we crammed as much of it into our faces as we could. This lovely Lemon Chiffon Cake meant a lot to me when I made it, and still does. Simply because it was made with lemons from my grandmother’s house in Ojai Ca. Since I was little girl, I’ve always loved to pick oranges, lemons and avocados from my grandparents house. There’s nothing better than freshly squeezed O.J. or homemade lemonade. However, I was beyond excited to finally be able to use my grandmother’s lemons in one of my recipes. So this cake my friends, is what I chose to make to showcase her homegrown, sweet and juicy lemons.
