Puff Pastry Cinnamon Rolls

Puff Pastry Cinnamon Rolls

We’re hereeeee!! Our last post before Christmas! I’m unsure if I’m going to be able to post next Tuesday, so I decided to post this Puff Pastry Cinnamon Roll recipe today! Instead of a candy or cookie recipe, I thought I’d change it up a bit and share a simple yet scrumptious recipe for Christmas Eve brunch, or Christmas morning! Holla!

These little beauties are not only golden and gorgeous, but from start to finish, they’re ready in about 35 minutes. Perfecto. These flaky/buttery rolls are packed with a cinnamon-sugar mixture and fresh chopped OPTIONAL nuts, ahem. I’ve also included a cream cheese icing recipe, in case you want to drizzle these bad boys.

I created this recipe yesterday when I didn’t know what to do with some puff pastry that I had bought. And to my amazement, they were light years better than I had hoped! So good in fact, that these rolls are what I’ll be baking for Brett and the fur babies on Christmas Eve! Yes my fur babies occasionally get some of my baked goods. And just a tiny bit, so don’t go calling PETA on me, snitches get stitches!

I know you want to check out the recipe already, so why don’t you head on over and see just how easy these are to make! Oh and like I said, there’s a possibility of me posting next week, but in case I don’t….I’d like to say from our family to yours, HAPPY HOLIDAYS! May all of you have a fabulous and safe holiday, eat until your hearts are content, and be good to one another! Thank you for an AMAZING year here at Niki’s Sweet Side, I’m so grateful to have each and every one of you here with me! You’re the greatest! Merry Christmas everyone! Love you guys!! 😀

Cinnamon Buttermilk Bars

Cinnamon Buttermilk Bars

As you guys probably know already, my fiancé Brett, is a lover of all sweets. But he was floored when I made these Cinnamon Buttermilk Bars for him. It was probably because they have a crunchy cinnamon crust, a soft & almost gooey center, and a perfectly sweet vanilla glaze. Wowzers, who wouldn’t want that? So I broke out the ol’ fat pants and made a pan. Or two. What? I’m not gonna lie.

So if you love cinnamon desserts or breakfast bars, then these are definitely for you, my friends. Have I mentioned that they’re amazing with a cup a joe? I only know this because I’ve eaten too MANY of these damn things lately. Mainly because I’m weak, and have no control when it comes to cinnamon-sugary things. And I feel it’s only fair that I warn you first, because these bars are highly addicting!

So consider yourself warned, and don’t get mad at me if your skinny pants don’t fit you anymore after you eat an entire pan. Ok you may now proceed. Click here for the easy-peasy recipe!

Quick and Easy Monkey Bread

Monkey Bread by Niki's Sweet Side

So it seems like everyone I know and look up to in the “food world” that I live in, is making Monkey Bread these days. We as food bloggers tend to get stuck on different types of food “kicks”. I’ve been on a cream cheese “kick” for a while, not sure if you’ve noticed or not 😉 But Monkey Bread is one of those wonderful recipes that can be adjusted to your liking, and can be made sweet or savory. Before this, I had never made Monkey Bread. I wanted to make it so badly yesterday, but I didn’t want to break out any yeast for bread making, and I didn’t want to use the cans of biscuits either. So while rummaging through Monkey Bread recipes, I came across Camille’s recipe from Growing Up Gabel. It’s a scratch recipe, but it’s not going to take you all day either. The dough recipe is OUT OF THIS WORLD! It’s soft and perfectly sweet, and it will knock your socks off when your palate experiences the brown sugar and cinnamon “gooey goodness” for the first time. And also, I would like to give a shout out to Dionne Baldwin, Jennifer Field and Barbara Schieving for inspiring me to finally make this stuff! And of course thank you Camille for the amazing recipe! Here we go my friends,  Click here for this yumm-a-licious recipe!

Cream Cheese Croissant Squares

Cream Cheese Croissant Squares by Niki's Sweet Side

These Cream Cheese Croissant Squares are hands down, my new favorite thing to eat for breakfast! They are amazingly yummy with a cinnamon and sugar topping, fresh chopped pecans and a cream cheese drizzle! I cannot begin to describe the fantastic flavors that will rock your tastes bud’s world. YES, they are that good. I made them this morning, and I plan on making them again this weekend, but don’t tell anyone. Oh and did I mention that this recipe was submitted to Pillsbury by a 9-year old a couple of years ago? How cool is that?! 🙂 Click here for the amazing recipe!
