Cinnamon Buttermilk Bars

As you guys probably know already, my fiancé Brett, is a lover of all sweets. But he was floored when I made these Cinnamon Buttermilk Bars for him. It was probably because they have a crunchy cinnamon crust, a soft & almost gooey center, and a perfectly sweet vanilla glaze. Wowzers, who wouldn’t want that? So I broke out the ol’ fat pants and made a pan. Or two. What? I’m not gonna lie.

 So if you love cinnamon desserts or breakfast bars, then these are definitely for you, my friends. Have I mentioned that they’re amazing with a cup a joe? I only know this because I’ve eaten too MANY of these damn things lately. Mainly because I’m weak, and have no control when it comes to cinnamon-sugary things. And I feel it’s only fair that I warn you first, because these bars are highly addicting!

Hey peeps! Well we’ve already made delicious Turtle Fudge, and everyone seemed to have loved it! I want to thank you guys for the great response to that recipe! I knew you’d like it as much as we do 😉 So I also wanted to share the English Toffee that I make to put on my holiday trays, who doesn’t love toffee?!

With literally just a few ingredients, you’re going to have the greatest tasting English Toffee in minutes! This recipe is so incredibly easy, that when I first made it (years and years ago), I couldn’t believe that I had just made gorgeous, perfectly textured, slightly buttery English Toffee that easily. It’s absolutely gorgeous right? I love the way it looks on holiday trays, and people are always impressed that you made it from scratch!

Seriously, if you guys love Heath Bars or Skor Bars, then holy crap… you’re going to love this English Toffee! I could not keep my fiancé out of it when I made my first batch of this holiday season. For those of you saying “Oh no she didn’t!”…..oh yes I did. Prepare yourselves for the most mouth-watering and gorgeous Turtle Fudge that you’ve ever laid eyes on. Beautiful isn’t it? As a self-proclaimed Turtle candy FREAK, I knew that I had to make my version of Turtle Fudge someday, and I knew it had to be epic. And folks, this is exactly what I had envisioned.

Making fudge, and the holiday season in general reminds me of my Daddy. He always made tons of different candy at Christmas time for all of our family members and friends. We lost him almost 7 years ago, but I’ll never forget his baking, cooking, and wicked sense of  humor. He IS the reason I make all of these yummy recipes, have a crazy-dry sense of humor, and see the beauty in life when everyone fails to. I can remember my Dad once telling me “Nicole, the physical act of stressing, accomplishes nothing”. Genius. I was almost 28 when I really figured out what he meant by that. But try to remember that, the next time you find yourself stressing out over the little things. Physically and mentally stressing out, isn’t helping anyone, especially yourself. It’s all for no reason and will accomplish nothing in the end. So take a deep breath, and move forward. It always gets better. How in the hell did this wind up getting so deep? Jeez man, you just came here for a fudge recipe! Woosa Niki.

So this insanely delicious Turtle Fudge has a fat layer of smooth chocolate fudge, covered in pecan pieces, draped with delicious caramel and more yummy chocolate fudge! Note how I totally switched gears from my Dad, to fudge, I hate crying. And he is my hero, so tears will follow if I keep talking about him….onto the damn fudge already. And thank you guys for listening, I know you’re all sweethearts and I love all of my friends that visit me here. You’re the best.

So, I’m sure you’re asking yourself, “Does it taste as good as it looks?”. Let me tell you from personal experience, it does. Every last bite of it is filled with glory and amazement. You guys should make a batch to impress people on Thanksgiving, or a cloudy Friday, at 2 o’clock on a Tuesday afternoon. Come on, ANY time is a good time for Turtle Fudge, people. Let’s do this already, shall we?

Oh wait, did I tell you that you can make this fudge ahead of time? Like a week ahead of time? PERFECT for holiday baking folks. Buckle up people…..I’m opening the flood gates….one at a time and single-file please!

Holy hell these Commotion Bars are caramel-icious and divine! They’re similar to my Snicker’s Fudge, with the homemade nougat, lightly salted peanuts, and yummy chocolate layer, but these have a chewy chocolate bottom crust that is to live for! No not to die for, these things will make you want to live forever and eat them everyday, until you weigh one million pounds. And they’d be worth every pound. I ate half the pan in 2 days by myself, and proud of it. All I can say is, they’re definitely going to be making an appearance on my holiday dessert trays this year! Hola mi amigos! How’s everyone been this past week? I myself have been totally messed up with this time change, are you guys too? Knowing me, it’s most likely going to take me until we need to set our clocks forward an hour, before I get used to it. Gotta love me.

Well, while thinking of a good recipe to post this week, I remembered that I got a really great response from the Chicken & Cheese Taquitos recipe a few weeks ago. And I’d like to thank you guys for that! I’m really happy that you enjoy them as much we do! Knowing that, I thought I’d share my Easy Chicken Enchilada recipe with y’all today. I know you’re excited, I can feel it. This is one of Brett’s favorite recipes. Well all of my Mexican food recipes are his “favorite” recipes, but he really digs this one.

Seriously though, the guy could eat his weight in refried beans and taco shells, and be in hog heaven. Me on the other hand, I prefer Mexican food a little on the lighter side. That’s how I came up with these, and they still taste like delicious “man food” as I call it. And who doesn’t love man food? Ok my eyes are covered…..are they gone? Damn. They’re still here. I’m warning you guys right now. If you make these Pecan Pie Bars and find yourself up at 2am eating what’s left of the pan, it’s NOT my fault. Man, these are my new favorite bar. And seriously, like we really needed pecan pie to be more portable? Yes we did, trust me. I just ate the last bar last night, which reminds me, I need to buy more corn syrup like now. Yes these are made with corn syrup but I don’t care! These could be made with antifreeze and the souls of small children, and I’d still eat the entire pan.

And these are basically just your classic pecan pie recipe, but to me they’re so much better in bar form. I love a good bar, and I know you do too. As long as they’re not those bars with 80 different types of candy in them. Sorry, but they’re a little crazy sometimes. Let’s keep it simple this time people. Anyways, check out my delicious looking Chicken (or Turkey) Pot Pie! Mmmm, nothing says fall or “comfort food” like a homemade Chicken Pot Pie, my friends. This pie is what the kids call, bomb-diggity. With carrots, peas, celery, potatoes, and chunks of chicken all baked into a flaky crust, you’re gonna be thanking me later, and you’re welcome in advance. Maple Pumpkin Pie

Holy cow man, it’s been WAY too long without you guys! I apologize for my absence, but I’ve been so busy. I’ve been making cakes as usual, but we also added two new puppies to our crew! We’ll get to the amazing lookin’ pie up there in a second 😉

So you guys, I had planned on getting a Yorkie puppy, to keep my other Yorkie (Simone) company. Which I did, and his name is Rebel and he’s the cutest ball of hair you’ve ever seen. But to our surprise, a beautiful 8-9 month old Boxer showed up on our doorstep about a month ago. Completely emaciated, covered in ticks and basically dying. She wasn’t chipped, however we did find her owner. And sadly, he no longer wanted her. Saying that “females boxers are too much of a hassle, and you can have her”. So this irresponsible moron of a guy, instead of finding a home for her, just turned her loose to fend for herself.

I don’t get why people don’t take care of their animals, and I especially do NOT understand why people think animals are disposable! They’re NOT. I’m still mad about that whole ordeal as you can tell, but in the end Greta the boxer wound up in a loving home with people who think the world of her. And I’m happy to report that she’s made a full recovery! We had her spayed, updated on shots, and then microchipped to us! We’re so glad that she’s not anywhere near that previous jerkface owner, and I love a happy ending!

 And as for Rebel the Yorkie, he is completely psychotic and bouncing off my walls 24 hours a day,  but he’s the sweetest little dude ever! Can you guys imagine me trying to make cakes and manage all of the fur babies? Yeah, it’s highly entertaining to watch, or so I’m told.

Here are the two new hooligans in our clan, don’t let those precious faces fool you either, they’re both insane in the membrane.

Well I suppose we could get to the recipe I have for you right? RIGHT! Sorry, I get carried away when I talk about my fur babies, but I wanted to let you guys know what was happening in my crazy, furry, buttercream-y world.

So today instead of giving you a weird pumpkin recipe, (like some concoctions that are out there right now). I bring you my Maple Pumpkin Pie! It’s not as boring as an old-fashioned pumpkin pie, which are delicious and you can’t go wrong with an original… but also not as weird as a pumpkin pie/mocha/coconut/ candy bar/cupcake lol. This bad boy has a hint of yummy brown sugar, delicious maple syrup and cinnamon, all held together in a fresh homemade flaky crust!
